We run four coating routes wax, PE (polyethylene), silicone and fully uncoated. So we can match the barrier to the food instead of over-building it. PE gives the strongest moisture barrier for wet, oily hot items. But it's harder to recycle than an uncoated greaseproof sheet, so choose it on purpose, not by default.
Two rules operators get wrong. First, no wax paper belongs near an oven. The coating softens and the barrier fails. Second, a heavier sheet isn't automatically better: a 60 gsm kraft sheet without greaseproof treatment will wick fat faster than a properly refined 35 gsm greaseproof sheet. Weight and grease resistance are separate properties.
